Hipsies Eat Too

In his excitement about the amount of views our blog has recieved lately, Dylan has been sure to contribute ideas on what to blog about:

– He put Christmas lights on his landrover….”we should take a picture and blog about this!”

– We had a fun day of chairlift evacuation training and hair cuts …”you should blog about this!”

– We decorated our Christmas tree … “this should definitely go on the blog!”

– The sheep do some funny things …. “you should blog about the sheep!”

– We made dinner … “this should go on the blog!”

And so, I’m obliged to include some of these ideas because, even though I intentionally scripted them above to seem like events from our daily lives, there is always an insightful and interesting perspective to be taken.

As you may have noticed, our blog is called “Local Gypsie Spot” (ie. me writing insightfully and creatively) and “Local Gypsies Pot”, which is where Dylan and I cook and blog about it.  I’m going to take the easy route here and blog about dinner, because we did trial a delicious holiday recipe of Roast Portabello Mushrooms with Chestnut Stuffing and Garlic Mashed Potatoes from The Globe and Mail.  We tweaked it a bit to make it a primarily local and in season recipe by using portabella mushrooms that were available from Ontario and we used Ontario leeks rather than fennel.  The mushrooms provided a juicy “meat-like” texture and the stuffing was so savoury and rich.  “They look like little burgers” – Dylan, meat eater extraordinaire.  And he loved them.

This being posted, I am aware that Ontario readers are the minority here, so we may keep the Ontario recipes to a minimum.  Unless you Ontario readers speak up and let us know you’re keen on more LOAF (Local, Organic, Animal friendly, Fair trade) recipes.

Roasted Portabello Mushrooms with Chestnut Stuffing

    love to see what you are up to and I want the recipe to get the ‘burgers’ looks so good

    better than bark food!

    Still owe Dylan a hat – I have mostly orange left but if you are out in the woods where hunters are maybe thats a good thing??

    • Bonnie, I love my hat! fyi. I wear it all the time and get compliments on it. It’s makes me so happy to explain how I have a little piece of everyone’s hat in my pompom. Anywho, Dylan’s would likely love orange 🙂 Are you ever in Collingwood? If you are, we should hook up for tea. No stress about the hat, he’s got a pretty cool ‘kimpossible’ toque too lol.
